At the age of 24, he opened his first restaurant. Morimoto Chef | Iron Chef

His official win/loss/tie record on Iron Chef is 16-7-1. Masaharu’s costume on Iron Chef consisted of silver with red trim and a picture on the back of Japanese and American flags tied together in a sheaf. He donned the standard blue Iron Chef outfit on Iron Chef America. The outfit consisted of white trim and a patch of the Japanese flag on his sleeve. The other Iron Chefs had flags from their respective countries on their sleeves. Masaharu wears purely aesthetic glasses in his professional life so as to distinguish himself from his on-screen persona.

Masaharu’s introduction as an Iron Chef came with little fanfare unlike his predecessor, Koumei Nakamura. It debuted the week following Nakamura’s retirement battle against Yukio Hattori. They chose Masaharu based on his style of cooking and international experience. His cooking style seemed to border on fusion cuisine. Initially, he was reluctant to accept the title of Iron Chef. However, he accepted it out of fear that the show would hire someone else.

Masaharu had originally planned to incorporate some of the dishes that he had routinely prepared in New York for Iron Chef. However, he later discovered that previous challengers and Iron Chefs had already made similar dishes. Masaharu would become known as the Iron Chef whose dishes always seemed to come out of the left-field. This is a famous example is his Bell Pepper Sushi in a sushi battle in 1999. Masaharu would usually have a bottle of Coca-Cola to drink while cooking on the show. He, on one occasion, combined it with nattō to fashion a dessert dish.

Morimoto Sushi

On  June 18, 1999, Masaharu competed in the first sushi battle in Kitchen Stadium against challenger Keiji Nakazawa. The five theme ingredients for the battle included Kohada (Japanese Gizzard Shad), tuna, Anago, eggs, and Kanpyō. Both Masaharu and  Nakazawa were given time to properly prepare the sushi rice (sushi-meshi) before the battle. At the end of the competition, Masaharu defeated Nakazawa. Masaharu has become known for being the target of a vice-chairman of the Japanese Culinary Association called Tadamichi Ohta who is also the head of the notorious “Ohta Faction” of Japanese chefs.

“Ohta Faction” themselves noted for targeting all the Japanese Iron Chefs starting with Michiba. The Ohta Faction lost three battles with Masaharu prior to winning one when challenger Seiya Masahara defeated Masaharu in the anglerfish battle. Since The Ohta Faction was not happy with just one win, they sent in a sake specialist, challenger Yusuke Yamashita to battle Masaharu. By then, Masaharu had lost two straight battles and no Iron Chef had ever lost three in a row. The theme ingredient for that battle was cod roe. The battle ended in a tie. The overtime theme ingredient was scallions and Masaharu defeated Yamashita in a 3–1 decision.

Morimoto NYC

He famously declared in his first battle with Bobby Flay in New York, battle rock crab, that Flay was “not a chef” because Flay stood up on his chopping board after completing his dishes. Masaharu went on to defeat Flay in the New York Battle. However, Flay contested the results believing that they gave him inferior cooking space and equipment. He added that he had cut himself and suffered several electric shocks during the battle.

As a result, the two chefs competed once again in Japan during the 21st Century Battles. Masaharu lost to Flay in the re-match with Japanese lobster as the theme ingredient. Despite him winning, Flay would become an Iron Chef along with Masaharu in the American spin-off, Iron Chef America. Both would face off a third time with Masaharu defeating Flay during the Holiday Ice Battle in November 2009. On January 1, 2012, a fourth battle between the two took place where Flay and Marcela Valladolid defeated Masaharu and teammate Andrew Zimmern by a narrow 51-50 margin in a sea whistle salmon battle.
