Marcus was informed by his father at a young age that the business was no longer viable as schools moved on to using pre-prepared frozen food instead of fresh produce. Eventually, he would credit Raymond’s long hours with inspiring his own work ethic.

At the age of 18 in 1988, he initially worked at the Savoy Hotel under chef Anton Edelmann where he was hired as a commis chef. Marcus left in 1993 to join Albert Roux at Michelin-starred Le Gavroche. There, he met the renowned Chef, Gordon Ramsey. Stints at other restaurants in Gravetye Manor in Sussex, Amsterdam, and New York City followed. He joined Gordon Ramsay’s Aubergine when it opened in 1993. There, Marcus became Sous Chef behind Head Chef Ramsay.

Also, he would go on to work with him over the course of the following fifteen years. As a result, Marcus was called Ramsay’s protégé. In 1995, he was awarded by the Restaurant Association the title of Young Chef of the Year while he was at Aubergine. Later, Marcus would credit Gordon with teaching him to cook. In 1995, he left Aubergine for a year to work with Guy Savoy in France and Daniel Boulud in the United States.

Marcus’ return to the UK was also to be his first head chef role at L’Oranger, a new restaurant which was owned by A-Z Restaurants. A-Z Restaurants also owned Aubergine. He earned his first Michelin star at the age of 25 as a head chef whilst at L’Oranger. Marcus gave Angela Hartnett her first job in a restaurant. In 1999, he and Gordon worked together to open Pétrus at 33 St James’s Street, London. Marcus became the head chef and operated the restaurant on behalf of Gordon Ramsay Holdings (GRH).

Pétrus came from the French wine of the same title. It is the pair’s favorite. He swiftly regained the Michelin star he had previously held. Additionally, their restaurant was named a one-star restaurant seven months after opening. In 2003, Pétrus was moved into the Berkeley Hotel. There, it replaced Pierre Koffmann’s La Tante Claire in the same year that Marcus became Chef Patron of the Grill Room at the Savoy Hotel. Moreover, the Caterer and Hotelkeeper’s Catey Awards named him Chef of the Year.

The return to the Savoy meant that Marcus was competing against his former boss from the River Room at the hotel, Anton Edelmann. He chose to continue to serve the British cuisine that the Grill Room was known for rather than serve a menu similar to the French cuisine of Pétrus. This included Marcus’ version of previous menu items such as potted shrimp and steak and kidney pudding. Pétrus went on to be awarded 5 AA Rosettes and 2 Michelin stars. On the other hand, Savoy Grill achieved its first Michelin star in 2004 in the hotel’s history.

At The Savoy, he opened Banquette, an American-style diner. Marcus also converted the former Pétrus location into La Fleur. In 2004, at the Tatler Restaurant Awards, he was voted Restaurateur of the Year. Harden’s restaurant guide also selected Marcus as the fourth-best chef in London although La Fleur closed due to problems with the lease for the site. Pétrus was awarded its second Michelin Star three years later in 2007.

In May 2008, the Berkeley Hotel confirmed that it was going to work with him to launch his only solo restaurant following various months of rumors regarding the restaurant. From 19 September 2008 onwards, he would take on Pétrus’ lease. Previously, Marcus had complained of interference in the kitchen by Gordon Ramsay Holdings. He wanted to come out from under Gordon’s shadow. Later, Gordon admitted that he had engineered the situation so that he could go out on his own.

The split between Gordon and GRH resulted in a feud and public legal battle between the 3 parties. This is then resolved in Marcus stating in an interview for Waitrose Food Illustrated magazine that Gordon left him bitter and conflicted. He went on to describe Gordon as a celebrity chef who was not involved in the industry anymore. The legal dispute was resolved with Gordon gaining the rights to the Pétrus name. On the other hand, Marcus signed a gag order regarding the situation. He continued to open his restaurant Marcus Wareing at The Berkeley.

In 2008 and 2009, his self-named restaurant won the Best Restaurant in London Award by Harden’s Guide. In 2009, it was awarded a Michelin star and was named Time Out’s Restaurant of the Year the following year. Marcus Wareing Restaurants was founded once Marcus Wareing at The Berkeley opened back in the year 2008. It has since expanded. At this present moment, it comprises 3 restaurants. He was named by GQ magazine in 2009 as their chef of the year. The Gilbert Scott, Marcus’ second restaurant in the St. Pancras Renaissance Hotel was opened in the year 2011.

Marcus Wareing at the Berkeley reopened as Marcus after an extensive refurbishment in 2014. He opened Tredwells located in Upper St Martin’s Lane, Seven Dials, London, in September 2014, with Chantelle Nicholson, the Group Operations Director.
