His training began soon after in a work-study program at the Auberge de l’Ill as an apprentice to Chef Paul Haeberlin. Vongerichten opened 10 restaurants around the world from 1980 to 1985 including the Meridien Hotel in Singapore, the Mandarin Hotel in Hong Kong, and the Oriental Hotel in Bangkok. He moved to the United States in 1985 under the auspices of consulting chef Louis Outhier. Vongerichten opened Le Marquis de Lafayette restaurant in Boston.

Moreover, in 1986, he arrived in New York to take over the executive Chef position at Lafayette in the Drake Swissôtel. After meeting with financiers Bob Giraldi and Phil Suarez, they opened a bistro, JoJo, in 1991. The JoJo became Best New Restaurant of the Year and earned three stars from The New York Times.
