He moved to the Chicago area back in the year 2001 to become the Executive Chef in Evanston, Illinois, at Trio. Trio had a four-star rating from the Mobil Travel Guide at the time of his arrival. Its reputation soared over the next three years with Grant at the helm. Furthermore, Trio was rewarded with a fifth star from Mobil in 2004. Hence, it became one of just thirteen restaurants so honored at the time.

He went out on his own in 2005. Grant opened Alinea in Chicago’s Lincoln Park neighborhood with American restaurant executive and author, Nick Kokonas. Alinea is based the block from the famed Steppenwolf Theatre Company. Furthermore, it is housed in a modest gray brick building that bears no external markings beyond its street number. Alinea seats just 64 guests and has no lobby and no bar.

Moreover, it serves diners a small-course tasting menu consisting of approximately eighteen courses. The Mobil Travel Guide bestowed its Five Star Award on Alinea after less than two years of operation. This made the restaurant one of just sixteen restaurants nationwide to rate five stars for 2007. Gourmet magazine named Alinea the best restaurant in America in October 2006 in its feature on America’s Top 50 Restaurants.

He and his Alinea team in November 2009 designed the menu for a restaurant in Salzburg, Austria, called Ikarus.
