Dublin Coddle
Ingredients
1 large onion, chopped
6 slices of thick streaky bacon rashers, roughly chopped
2-3 (800g) large waxy potatoes, peeled and cut into small pieces
8 butchers sausages
30g butter
A good handful of fresh parsley, roughly chopped
Sea salt and freshly ground black pepper
Guinness Bread, to serve
Method
In a heavy-based casserole dish, add the bacon, sausage, onion, potato, and butter with a splash of water. Season and leave to simmer over medium heat for 15 – 20 minutes until the potatoes are tender. Add the parsley and serve in bowls alongside Guinness bread.
Donal Skehan Cookbooks
In 2011, Donal published a cookbook based on the television series, Home Kitchen Hero – Bringing Cooking Back Home. A second series and a Christmas special were aired in 2012. UKTV network Good Food started airing the show in April 2012. The show is now in its sixth year of production. In 2021, Donal’s book Everyday Cook won Cookbook of the Year at the Irish Book Awards. On 23 February 2008, Donal took part in Eurosong 2008 in a bid to represent Ireland in the 2008 Eurovision Song Contest with the song “Double Cross My Heart”. It was a pop song composed by Joel Humlen, Oscar Gorres, and Charlie Mason, and performed by Donal with two male and two female backup dancers, as well as a male backup singer. Donal was one of the Final 6, alongside Dustin the Turkey, Maja, Leona Daly, Liam Geddes, and Marc Roberts; with Dustin, Turkey winning with the song “Irelande Douze Pointe”.
