Ingredients
- 4 boneless, skinless, chicken breasts
- All-purpose flour, for dredging
- salt and freshly ground black pepper
- 1/4 cup extra-virgin olive oil
- 4 ounces prosciutto, thinly sliced
- 8 ounces crimini mushrooms, stemmed and halved
- 1/2 cup sweet Marsala wine
- 1/2 cup of chicken stock
- 2 tablespoons of unsalted butter
- 1/4 cup chopped flat-leaf parsley
Method
- Place the chicken breasts side by side on a cutting board and lay a piece of plastic wrap over them, and pound
- Tenderize with a flat meat mallet, until they are about 1/4-inch thick.
- Mix it with flour salt and pepper; mix with a fork to distribute evenly.
- Heat the Olive oil over medium-high flame in a large skillet
- Dip the chicken cutlets into the pan and fry for 5 minutes on each side until golden, turning once.
- Remove the chicken and place it on a large platter in a single layer to keep warm.
- In the same pan Lower the heat to medium and add the prosciutto to the drippings for a minute.
- Now, add the mushrooms and saute until they are nicely browned, and then season with salt and pepper.
- Pour the Marsala into the pan and let boil down for a few seconds to cook out the alcohol.
- Then add the chicken stock and simmer heat for a minute to reduce the sauce slightly.
- Afterward, Stir in the butter and return the chicken to the pan; simmer gently for 1 minute to heat the chicken through.
- Before serving season with salt and pepper and garnish with chopped parsley.

Ingredients
- 2 kg golden creamer potatoes, peeled and cut into quarters
- 1 bay leaf
- salt and freshly ground black pepper
- 2 cups of heavy cream
- 3 tablespoons of unsalted butter
- 2 tablespoons of chopped chives
Procedure
- Clean the potatoes and the bay leaf
- Place the potatoes into a large pot, add the bay leaf, 2 tablespoons salt, and cover with cold water.
- Bring the potatoes to a boil over medium-high heat and cook until the potatoes are tender about 20 minutes.
- After 20 minutes drain the water and remove the bay leaf
- Heat the cream and butter in a small saucepan
- Place the potatoes through a ricer or food mill into a bowl. Add the hot cream and season with salt and pepper.
- Mix with a spoon and add the chives.
