He first cooked in the Cleveland restaurant scene, working at Player’s, a Mediterranean restaurant in Lakewood. He worked as a chef at Piccolo Mondo and later Caxton Cafe. Along with his wife, they opened Lola in February 1997, naming it after his aunt. In October 2000, the restaurant was named one of America’s Best Restaurants in Gourmet magazine. The hotel was converted to Lolita in 2005 and also reopened Lola in downtown Cleveland the next year.
Symon opened a third restaurant Parea on April 15, 2006, in New York City and it was under by Jonathon Sawyer. However, the hotel was closed in 2007 and was acquired by Stavros Aktipis who renamed it Kellari’s Parea. Further, he opened a Roast restaurant in 2008 and Bar Symon in Avon Lake in 2009 but was closed in October 2010. He opened BSpot at the Horseshoe Casino Cleveland and a club at Cleveland Browns Stadium for the 2012 NFL season.
Symon expanded his restaurants by opening Mabel’s BBQ on East 4th Street on April 11, 2016, and later another Mabel’s BBQ restaurant opened at the Palms Casino Resort. Symon later opened Cleveland Hopkins International Airport and the Borgata Hotel Casino & Spa in 2017. In addition due to COVID-19, his flagship restaurant Lola and 2 more locations of BSpot were closed.
