Bailey partnered with entrepreneur John O. Morisano and they bought a long-abandoned, former Jim Crow-segregated Greyhound station. The two named the restaurant The Grey. Bailey works as the head chef at the restaurant. The two also bought a former Greyhound bus depot in downtown Savannah in March 2013 for $945,000.
The restaurant offers American and Southern food types with a full bar, with cocktails including gimlets. Moreover, on October 15, 2018, the two partners opened The Grey Market in Savannah inspired by Southern lunch counters and New York City bodegas.
