Formerly, Mallory was an entertainer and beauty pageant titleholder. She won the title of Miss Kentucky in 2009 and was 4th runner-up to Miss America in 2010. It was announced in September 2010, that Mallory competed on The Amazing Race 17 with her father Gary Ervin.

In The Amazing Race 18: Unfinished Business, Mallory and her father achieved three first-place finishes, two second-place finishes as well as two third-place finishes. They both made last place in the 8th leg and also had to perform a penalty task in the 9th leg to be allowed to continue racing.
Ultimately, the team placed 3rd out of the 11 teams in the final leg and they lost to Harlem Globetrotters of Flight Time & Big Easy (runner-up) and Sisters of Kisha & Jen. The latter were the winners. Mallory joined Mark Jackson on The Amazing Race 24: All-Stars, after Mark’s teammate William “Bopper” Minton was deemed unfit to race as a result of pancreatitis. Both Mallory and Mark finished in 6th place in the 1st leg. However, they were eliminated in the 2nd leg, finishing in 10th place.
