James Martin is a British chef and television presenter. He is best known for his television work with the BBC and ITV. James presented the BBC cookery series Saturday Kitchen from 2006 until 2016, before leaving the BBC.

He has presented James Martin’s French Adventure (2017), Saturday Morning (2017–present), and American Adventure (2018) for ITV. James first appeared on television in 1996 on programs including Yorkshire’s Finest set in various Yorkshire locations. He also had an emphasis on Yorkshire cuisine, Ready Steady Cook, and The Big Breakfast.

From 2006 until 2016, James served as the presenter of the BBC One show Saturday Kitchen. In September 2011, he was tasked with revamping the menu and catering facilities at Scarborough General Hospital, for Operation Hospital Food for the BBC.

Butterfly cakes

Ingredients
200g butter
200g self-raising flour
4 eggs
200g caster sugar
1 vanilla pod, seeds removed
Icing sugar to dust

For the icing:
200g softened butter
400g icing sugar
1 teaspoon vanilla extract

Method

Preheat the oven to 180ºc. To make the cakes, beat the butter and sugar in kitchen aid until white and fluffy then add the eggs and vanilla seeds and mix until they are combined. Fold in the flour by hand. Line a muffin tray with cupcake cases and fill using an ice cream scoop. Bake for 15 minutes then allows cooling.

To make the icing, whisk together the butter, sugar, and vanilla. When the cakes are cooked, remove them from the oven and allow them to cool. Cut circles from the top of each cake and slice them in half. Fill a piping bag with the icing and, using a star nozzle, pipe the buttercream into the center of each cake. Top each cake with two small sponge “wings” and dust with icing sugar.
