Ingredients
- 1½cups sweet cream butter (3 sticks)
- 1½cups packed light brown sugar
- 1cup white sugar
- 1 large egg + 1 egg yolk
- 1tablespoon vanilla extract
- 1teaspoon baking soda (dissolved in 2 tablespoons of hot water to activate; microwave water first then stir in baking soda to dissolve)
- 2cups all-purpose flour
- 1cup cake or pastry flour
- 1teaspoon baking powder
- 1teaspoon cinnamon
- 1½teaspoons salt
- 1cup Ghirardelli white chocolate chips
- 1cup Ghirardelli milk chocolate
- 1cup pecans (optional)
Process
- Melt butter in the microwave in 20-second increments and then let it cool for 15 to 20 minutes.
- Add brown and white sugar to the butter mixture and mix for 4 minutes.
- Add the eggs one at a time and then the vanilla and mix for 30 seconds.
- Add the dissolved baking soda.
- Use a separate bowl to add all-purpose flour, cake or pastry flour, baking powder, cinnamon, and salt, and mix to combine.
- Use the mixture adding 1/2 cup at a time to the mixer while scraping down sides.
- Add all chocolate chips and pecans and place the mixture in the refrigerator for at least 3 hours.
- Use a preheated oven of up to 350f to bake the cookies. Ensure that the dough is at room temperature. Scoop dough onto a baking sheet.
