On November 15, 2019, Jeff shared a recipe for making Mashed potatoes. The ingredients and procedure are as follows.
Ingredients
- 1 tablespoon Kosher salt.
- 2 cloves of garlic, zested.
- 1/4 cup fresh minced chives.
- 2 tablespoons fresh parsley, minced.
- 1/2 tablespoon cracked black pepper.
- 1 cup half-and-half, warmed.
- 6 ounces cream cheese.
- 1.5 sticks of butter, 1 softened and 1/2 melted, plus more for greasing.
- 5 pounds Idaho russet potatoes, peeled and cut into 1-inch pieces.
Procedure
- Put the potatoes in a large saucepan add one tablespoon and cover with water.
- Boil the potatoes and cook over medium-high heat for about fifteen minutes.
- Drain the potatoes and let them dry.
- Mix the cream cheese and one stick of softened butter in a large bowl.
- Blend the mixture using a hand mixer on medium speed for about two minutes.
- Add the dried potato to the mixture and whip until blended.
- Then add pepper, garlic, and salt to the mixture.
- Pour the mixture into a greased baking dish and Refrigerate for two days.
- When ready serve the top with half a stick of melted butter and bake at 350 degrees for around 45 minutes until it’s slightly golden.
- Garnished with minced chives and Keep warm in a 200-degree oven until ready to serve.
