Gail Simmons is a Canadian cookbook author and food writer who served as a permanent judge on Bravo’s Emmy-winning series called Top Chef. Gail served as a judge since the show’s inception in 2006. Previously, she was the head critic on Top Chef Duels and host of Top Chef: Just Desserts, Bravo’s pastry-focused spin-off of the Top Chef franchise.

Also, Gail co-hosted The Feed, which aired on FYI, A+E’s new lifestyle network in 2014. According to Gail’s husband Jeremy, Spaghetti Pie is the biggest thing that she has ever made. The pie is similar to sausage lasagna or baked ziti with sausage but way more impressive to serve. The Spaghetti Pie recipe alls for a jaw-dropping amount of cheese but as per Gail, it’s worth it.

Gail Simmons Mushroom Stroganoff

What you need
– 1 tablespoon butter
– 1 teaspoon oil
– 2 large onions, chopped
– 1/4 pound shiitake mushrooms, sliced
– 1/4 pound oyster mushrooms, sliced
– 1/4 pound chanterelle mushrooms, sliced
– 1/4 pound morel mushrooms
– Juice from 1/2 lemon
– 1/2 teaspoon salt
– 1 teaspoon dried basil
– 1/2 pint nonfat sour cream
– 12 ounces cooked pasta, your favorite (I prefer angel hair)
– 1/3 to 1/2 cup nuts, chopped

How to Make MUSHROOM STROGANOFF
– Melt butter and oil in a large nonstick frying pan
– Add onions and mushrooms and cook
– Covered for about 3 to 7 minutes or until mushrooms start to soften ( leave the lid on to keep it from drying out)
– add lemon juice along with seasonings and sour cream ( When mushrooms have softened) and mix well
– Add cooked pasta and heat thoroughly.
– Season with salt and pepper, if needed, and serve.

What you need
– 3 1/2 pounds baking potatoes, peeled and halved
– 1 large yellow onion, cut into 8 wedges
– 1/2 cup all-purpose flour
– 2 eggs, lightly beaten
– 2 tablespoons chopped dill
– 1 1/2 teaspoons salt
– 1/4 teaspoon baking powder
– Canola oil, for frying
– Ivor’s Pink Applesauce and sour cream, for serving

Steps
– Set a large strainer over a bowl
– Shred the potatoes and onion in batches in a food processor fitted with the shredding disk
– Add each batch to the strainer and let stand for 5 minutes.
– Squeeze dry
– Pour off all of the liquid in the bowl
– Add the shredded potatoes
– Stir in the flour, eggs, dill, salt, and baking powder
– Scrape the mixture back into the strainer and set it over a bowl; let stand for 5 minutes.
– Heat 1/4 inch of canola oil in a very large skillet until shimmering
– Spoon 2 tablespoons of the potato mixture into the canola oil for each latke, pressing slightly to flatten.
– Fry over moderate heat, turning once, until the latkes are golden and crisp on both sides, about 7 minutes.
– Drain the latkes on a paper towel-lined baking sheet.

– Serve the latkes hot with Pink Applesauce and sour cream.
